From Farm to Bowl

Growing veggies at the garden is one thing but cooking with them, that requires a whole different set of skills and creativity.


Over the last few years our garden has been blessed with herbs and even though we love herbs, when will we know how much is too much? ...well, we've thought of a few recipes to use them up and boy have we gotten inventive or what.


This one is a bit of a magic trick. Onion Soup without onions? Let the leekery blow your mind.

Appetizer: Onionless Soup Recipe (The Herb Edition)

Vegan Garden Herb Soup Recipe
Oregano, rosemary, chives at the Greenhouse
Fresh bunch of Garden Herbs

Garden Ingredients: Chop them all!

BIG (if not huge) bunch of chives & Chinese leek

1 stem of each: Rosemary, oregano, thyme & basil.

4 cloves garlic

1 turnip

1 potato

1 tomato

1 green pepper or a spicy one if you're feeling sassy


Other less fun Ingredients:

1/4 cup  olive oil

1/2 cup red wine (or water but com'on)

2 teaspoons sea salt

Pepper, cumin & turmeric, to taste


Instructions: In a large pot, heat the oil over medium-low heat. Add all garden ingredients. Sauté for about 11 minutes. Stir often to avoid sticking or burning.  Add the red wine and turn heat up to bring to a simmer. Now reduce heat and gently simmer on medium-low for about 10-15 minutes, or until the wine has evaporated. Add 2 quarts of water, salt, and pepper. Turn heat up to to get things moving and turn right down to gently simmer for 10-15 minutes.


And there you go, a healthy, easy and delicious appetizer made mostly with produce that grows right here in Northeast Tennessee.
